Easy Veggie & Carb Meal Prep for Mom & Baby!
I know making all of your own baby food may seem like a lot of work, and in the beginning when they first start eating it can be a bit more because you’re likely pureeing foods you may not normally eat. But I promise as they get a bit older & they’re able to eat more foods, it is SO easy to cook for both yourself & babe at the same time!! I rarely prep foods for Dax that I don’t eat myself!
In this YT video I show a super quick tutorial on how I make my potatoes, yams/sweet potatoes & some veggies(cauliflower & broccoli shown in the vid) for both Daniel, Dax & myself! I will typically cook a batch of lentils/rice or beans also or some sort of protein source like fish or meat alongside the veggies and potatoes, but since I was cooking meat, and I don’t feed Dax any meat yet(not sure when or IF I will introduce it ever yet) I just wanted to show the foods I was prepping that we all would be eating!
1 head cauliflower
1 broccoli crown(large)
3 large sweet potatoes
6 medium sized regular potatoes
Seasonings of Choice
I pre cut/chopped all of the veggies & potatoes & put them on tinfoil lined baking sheets.
Save some finely chopped veggies & throw them in a pan with a little bit of water & let steam, covered for 5-7 mins.
Wrap 2 sweet potatoes in tinfoil (this is for baby, or you if you like mashed yams!)
I then drizzled olive oil all over, and lightly seasoned with various seasonings(garlic spread, pepper and some light lemon pepper seasoning). Stir.
Put in the oven at 450, let bake for 25-35 mins stirring occasionally. **The sweet potatoes wrapped in tinfoil will likely take close to 45-1hr depending on size, just poke with a fork & ensure it goes through with ease to know they’re done - you want them VERY soft.
That’s it! Let cool! Break up baked potatoes/veggies into smaller pieces for babe once they’re cool to the touch of your inner arm, ready to feed to babe!
You can also store the leftover mashed yams in the freezer !
